The Project

Context

Dijon, the former capital of the Dukes of Burgundy (9th century AD) and now the capital of some of the world's finest wines - Clos Vougeot, Domaine de la Romanée-Conti, etc. - was selected alongside Lyon, Paris, and Tours to defend and promote the "French gastronomic meal," which was added to UNESCO's Intangible Cultural Heritage list in 2010. We were chosen alongside Eiffage by Greater Dijon following the call for expressions of interest launched by the local authority to implement its expertise and promote local terroir within a city of international renown. Located at Km 0 of the Burgundy Grand Crus Route, the International City of Gastronomy and Wine in Dijon (CIGV) opened its doors in May 2022 on the site of the former Hôtel-Dieu.

Approach

Spanning 6.5 hectares, the CIGV defines a new gateway to the city of Dijon and its region. As an emotional and cultural link between the people of Dijon and the General Hospital, set in a region emblematic for its gastronomy and savoir-vivre, its unique programming draws on all the heritage and landscape characteristics of the site to offer a comfortable place where culture, learning, and leisure come to life around a vast eco-district. Our architectural approach consists of weaving a dialogue between tradition and contemporaneity specific to French gastronomy, associating the enhancement of historical elements with architectural programming. The project showcases the products of the terroir, culture, and architecture of this extraordinarily rich region through a "menu" that can be savored every day. Just as a chef works to bring the grand landscape of gastronomy into the small landscape of the plate, our architecture serves a unique and timeless menu through the encounter of history, gastronomy, and the people who will inhabit it. The Burgundy "climats" represent the complex collaboration between Man and Nature giving birth to great wines. In a way, we aim to translate the exceptional flavor of wines into lasting and comfortable happiness.

Challenges

The art of the table is set by the renaissance of the Hôtel-Dieu's architecture. The project's vitality is ensured by the mix of its educational, cultural, festive, and above all gastronomic programs. This ensemble is the link that allows the old center to break free from the railway tracks, which are themselves blended into an ecological corridor and pedestrian paths leading visitors to discover this unprecedented place. Extending over 3.5 hectares, the eco-district of housing in the International City of Gastronomy in Dijon replaces the service buildings of the former hospital, in continuity with the old park, to transform these places into an inhabited park.

Ferrandi school

Ferrandi Paris offers intensive five-month training programs in pastry and French cuisine, in English. Each year, 110 students from around the world will be welcomed in 850 m² of educational spaces within the showcase building of the cité, called the light cannon. They are also trained in oenology and food and wine pairings. The program, which includes the discovery of the Burgundy region and its products in the student curriculum, also allows amateur enthusiasts the opportunity to take short courses.

Workshops and tasting courses

Workshops and tasting courses, led by professionals and instructors from the Burgundy Wine School - sommeliers, oenologists, geologists, sensory analysts - are offered to the general public.

The covered market

5,000 m² of shops make up the gastronomic commercial village of the city.

This ensemble is punctuated by artistic gestures inspired by the culinary arts and centered around original restaurants, wine bars, and a spectacular wine cellar, along with about fifteen specialized boutiques offering local products and French gastronomic expertise. As an extension of its Parisian counterpart, a Gourmet Bookstore presents the world's largest selection of cookbooks and oenology literature.

The climats exhibition

1,750 m² of exhibition space and a demonstration shop/workshop are venues for expressing the French gastronomic meal and the Burgundy climats in all their dimensions.

They demonstrate their importance within a unique cultural heritage. A visitor ticket provides access to a modern building, the Gastronomy and Wine Pavilion, and to a remarkably rehabilitated building on the site, the Chapel, partly dedicated to the Climats of the Burgundy vineyard. These spaces host a permanent exhibition in three acts (At the Table!, In the Kitchen, In Burgundy) as well as a temporary exhibition, regularly renewed, with the first one, sponsored by Pierre Hermé, having the delicious theme of "French pastry".

A Pathé cinema complex was incorporated into the programming. The National Commission for Cinema Development (Commission nationale d'aménagement cinématographique) gave its official approval for the establishment of these cinemas within the CIGV. The Pathé Dijon complex includes 9 screens with a total capacity of 1,200 seats. Its construction required significant technical achievements. The building was then handed over to the Pathé-Gaumont group for the completion of interior design and furnishings.

The Sainte-Anne Hotel Dijon, Curio Collection by Hilton, is a 4-star hotel establishment that is an integral part of the International City of Gastronomy and Wine project. With an area of 7,945 square meters, it offers 125 rooms and is equipped with a spa and an outdoor swimming pool.

L’éco quartier

Extending over 3.5 hectares and located a stone's throw from the Garden of Sciences - botanical garden, Natural History Museum, planetarium - and the canal port, the eco-district of the CIGV is ideally situated on the banks of the Ouche river along which a green corridor has been developed. This eco-district is developed in the form of an inhabited park, on the site of dilapidated buildings constructed in the 20th century which have already been demolished. It embodies a new way of living, between culture and nature, in the center of Dijon, while benefiting from the numerous facilities and shops of the CIGV. This complex includes subsidized and owner-occupied housing, as well as 3 managed residences for students, seniors and tourists.
